Indian Prawns Meal: *Tastybite Madras Lentils *Indian Prawns *Cucumber Riata
Indian Prawn:
- 1lb (450 grams) prawns
- 4 cups canned Italian Plum tomatoes drained well and chopped
- 1 tablespoon olive oil
- 1 Medium onion chopped
- 2 gloves garlic minced
- 2 tablespoons fresh lemon juice
- 2 teaspoons Curry Powder
1)Peel and devein prawn
2)In large nonstick skillet, heat oil
3)Add onion and garlic, saute` until softened
4)Add tomatoes, lemon juice and spices
5)Bring to boil, reduce heat, cover and simmer for 15 minutes
6)Add prawn and cook3-5 minutes, or until cooked through
7)Garnish with Parsley
Cucumber Raita:
-1 cucumber
-1 fresh green chili, seeded and chopped
-1 1/4 cup plain yogurt
Add a pinch of salt and a touch of cumin to taste
1)Dice Cucumber finely and place in large mixing bowl add the chili.
2)Beat the natural yogurt with a fork until smooth, and then stir into the cucumber and chili mixture.
3)Stir in the salt and cumin. Cover the bowl with clear film(plastic wrap) and chill before serving.
Cook Madras Lentils according to pack instructions. Serve with Indian Prawn and garnish with Cucumber Riata.
