Start your day with hearty breakfast burritos filled with protein-packed lentils, eggs, and Indian flavors. These wraps are meal prep friendly and easy to customize.

INGREDIENTS

  • 1 cup TASTY BITE® Organic Madras Lentils
  • 1 cup TASTY BITE® Basmati Rice
  • 1 onion, chopped
  • 6 large eggs
  • 8 flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 sliced avocado
  • 2 tbsp butter (for eggs);
  • Salt & pepper to taste

METHOD

  1. 1.
    Using a medium pan, sautee the chopped onion with half the butter until golden and translucent.
  2. 2.
    While the onion is cooking, heat the lentils and the rice according to bag instructions.
  3. 3.
    Once onions are cooked, remove from the pan and place in a bowl. Set aside.
  4. 4.
    Using the same pan, add the rest of the butter and scramble eggs. Season with salt and pepper.
  5. 5.
    Assemble burritos using the rice, lentils, onion, eggs, cheese, and avocado.
