A colorful, better-for-you spin on nachos. Roasted sweet potato rounds are topped with TASTY BITE® Indian flavors, creamy avocado, and zesty toppings for a vibrant, nutrient-packed snack or meal.

INGREDIENTS

  • 1 Thinly sliced sweet potatoes
  • Diced tomatoes
  • Pickled red onions
  • Black olives
  • Sliced avocado
  • TASTY BITE® Coconut Korma Sauce
  • Mexican four cheese blend
  • Chives, thinly chopped

METHOD

  1. 1.
    Thinly slice sweet potatoes in rounds.
  2. 2.
    Place sweet potato chips in an even layer across a baking sheet/dish, sprinkling with salt, pepper, & a drizzle of olive oil.
  3. 3.
    Bake sweet potatoes for 15 minutes @ 450 degrees.
  4. 4.
    Remove from oven, then top with cheese.
  5. 5.
    Place back into the oven for ~5 minutes or until cheese is melted.
  6. 6.
    Remove from oven, then load up with all the toppings!
  7. 7.
