Thinly sliced zucchini wrapped around a creamy, cheesy Butter Chicken filling. These roll ups are a flavorful low-carb option that make a great appetizer or light main dish.
INGREDIENTS
- 2 large zucchini, thinly sliced lengthwise
- 1 cup shredded cooked chicken
- 1 cup TASTY BITE® rice, cooked
- 1 TASTY BITE® Tikka Masala sauce jar
- 1 cup shredded mozzarella cheese or dairy-free substitute
- Olive oil
- Salt and pepper to taste
- 2 tbsp garlic sauce, garlic yogurt sauce, or garlic aioli drizzle on top
METHOD

1. Slice zucchini lengthwise into thin strips.

2. In a bowl, combine shredded chicken, cooked rice, salt, and pepper.

3. Lay zucchini strips on a flat surface. Place a spoonful of the chicken-rice mixture in the center of each strip. Roll up tightly and secure with a toothpick.

4. Preheat your oven to 375°F (190°C). Drizzle the bottom of an oven-safe skillet with olive oil. Arrange the zucchini rolls in the skillet.

5. Pour the tikka masala sauce over the rolls, ensuring they are evenly coated. Top with shredded mozzarella cheese.

6. Cover the skillet with foil and bake for 20-25 minutes, or until the zucchini is tender and the cheese is melted and bubbly.

7. Remove from the oven, let cool slightly, and serve hot. Drizzle with garlic sauce.
