Madras Lentils & Basmati Rice

  • 2 pouches Tasty Bite Organic Madras Lentils
  • 2 pouches Tasty Bite Microwavable Basmati Rice
  • 2 Tbsp. Cilantro or parsley (optional)
  • Yogurt for garnish (optional)

Yogurt Marinated Chicken & Paneer Veggie Skewers

  • 1 cup plain yogurt
  • 2 Tbsp Tasty Bite Tikka Masala simmer sauce
  • Pinch Salt
  • 1 ½ lb boneless chicken thighs, cubed
  • 14 oz paneer, cubed
  • 1 large bell pepper, chopped
  • ½ small red onion, chunked
  • 1 medium zucchini sliced

Cucumber Raita Salad and Garlic Naan

  • 2 cups cucumber, diced
  • 1 cup plain yogurt
  • ¼ Tsp ground cumin
  • 2 Tbsp fresh mint, cilantro, or both, divided
  • salt to taste
  • 4 pieces naan
  • 2 Tbsp. Butter or ghee, softened
  • 1 tsp. minced garlic

Quick Kheer Rice Pudding

  • 2 cups whole milk
  • 2 Tbsp sugar
  • ½ Tsp cardamom
  • 1 pouch Tasty Bite Microwavable Basmati Rice
  • 2 Tbsp chopped nut, pistachios or almonds
  • 2 Tbsp raisins
  • Pich salt

Tikka Masala Simmer Sauce

DIRECTIONS

Madras Lentils and Basmati Rice

    Tear the corner of the Lentil pouches to vent and microwave both together for 2 minutes.
  2. 2
    Massage the pouches of Basmati rice, tear the corner to vent, then microwave both pouches together for 2 ½ minutes.
  3. 3
    Pour Lentils into a wide serving bowl, swirl in some yogurt and sprinkle with fresh cilantro or parsley for garnish if desired. Serve alongside the Basmati rice.

Yogurt Marinated Chicken & Paneer Veggie Skewers

    In a mixing bowl, stir together yogurt, Tasty Bite Tikka Masala Simmer Sauce, and a heavy pinch of salt.

    Set aside about ¼ cup of yogurt mixture to brush vegetable and paneer skewer with later. Stir the cubed chicken into the bowl with the remaining yogurt marinade and refrigerate at least 20 minutes, or up to 6 hours.

    Preheat a grill, broiler, or griddle to medium-high heat.

    Lightly shake off excess yogurt mixture, leaving a light coating. Thread chicken chunks onto skewers.

    Thread vegetables and paneer onto a second set of skewers and lightly brush with the reserved yogurt marinade. Season with salt to taste.

    Cook skewers for 8–12 minutes until cooked through.

Cucumber Raita Salad

    Stir together cucumbers, yogurt, cumin, salt, and 1 Tbsp of the fresh mint and/or cilantro in a mixing bowl. Set aside in the refrigerator until ready to serve.

    Note: English/hothouse style, or Persian/baby cucumbers have fewer seeds and work well for this recipe.

Garlic Naan

    Stir together softened butter or ghee and minced garlic.
  2. 2
    Brush naan with butter mixture and sprinkle with chopped parsley or cilantro if desired.

    Wrap in foil and heat in 350°F oven until warm, about 10 minutes.

Quick Kheer Rice Pudding

    Combine whole milk, sugar, cardamom, raisins, and salt in a medium saucepan and stir over medium heat until just below a simmer.

    Massage pouch of rice to loosen grains and stir into milk mixture. Simmer and stir for about 10 minutes, or until desired consistency. Careful to not allow it to come to a full boil.

    Remove from heat and let stand 5 minutes.

    Pour into bowls, top with chopped nuts and enjoy warm, or chill to enjoy later.

    Note: For richer pudding, add 2 Tbsp of sweetened condensed milk. This pudding will not get thick like typical American pudding, but it should be creamy and soft.
