This hearty vegetarian dish combines TASTY BITE® Chickpea Tikka Masala with jammy eggs and rich tomato sauce for a spiced-up shakshuka perfect for brunch or dinner.
INGREDIENTS
- 1 tablespoon olive oil
- 1 red bell pepper, diced
- ½ a yellow onion, diced
- 1 bag TASTY BITE® Chickpea Tikka Masala
- ½ cup canned tomato sauce
- 3-4 eggs
- Parsley and feta cheese, for topping.n powder
METHOD

1. Heat the olive oil in a small skillet over medium heat.

2. Add the pepper and onion and sauté for 5-7 minutes, until the onion is translucent.

3. Stir in the Tasty Bite Chickpea Tikka Masala and tomato sauce and bring to a simmer.

4. Once the mixture is simmering, create 3-4 wells and crack in the eggs.

5. Cover the pan and let the eggs cook for 3-5 minutes.

6. Top with feta cheese and parsley, and serve over Tasty Bite rice (I used their turmeric rice).
